We cultivate emotions
A significant portion of the ingredients served in our receptions comes from our farm, conceived from the beginning as a fundamental part of the experience we aim to provide to our guests.
The wines we produce accompany toasts, honey sweetens breakfasts, vegetables, and cured meats transform into genuine yet refined recipes for wedding banquets. We believe in the concept of farm-to-table cuisine, intertwining daily care and a pursuit of excellence, starting with a mindful and sustainable cultivation of raw materials. Much of the produce served in our receptions originates from our farm, always designed as an integral part of the emotional experience we want to offer to our guests.
The farmhouse is personally overseen by Maria Acquaroli, who takes care of the cultivation and processing of raw materials that then make their way into the kitchen. The farm consists of various spaces dedicated to cultivation, starting with the Vineyard. The vineyard is the heart of our agricultural production, and its distinctive hexagonal shape characterizes the layout of the estate. Here, we cultivate Pinot Grigio and Chardonnay grapes following the Metodo Classico, giving life to the Esagono Sparkling Wine. The surrounding lands are dedicated to the Incrocio Manzoni grape, the source of the still white wine named Agata. We serve these high-quality wines during receptions held at the estate, for toasts and to accompany the banquet. A selection of bottles is available in our Online Shop.
The garden-vegetable garden.
In the estate, there is a vegetable garden where some of the vegetables used in the kitchens are cultivated, such as carrots and celery for our tasty Giardiniera, which is available in the box for sale in our Shop. We are committed to cultivating our land responsibly, following the natural cycles of the soil. For this reason, shrubs, aromatic herbs, and flowers alternate with vegetables according to the principles of companion planting, which helps control the presence of weeds and pests, consequently reducing the need for pesticides.
Extra Virgin Olive Oil and medicinal plants
On the highest hill of the park, medicinal plants are cultivated with which we produce a selection of herbal teas available for tasting by our guests, featured in the box for sale in our Shop.
We also maintain a small production of extra virgin olive oil, from olive tree varieties such as Leccino, Casaliva, and Frantoio planted in the olive grove around the estate. This oil is used in the dishes served during receptions, exclusively dedicated to our guests.
The beehives, the chicken coop, and the pigs
At the edges of Valchiara, along the borders of the Incrocio Manzoni vineyard, we host nine beehives from which we collect honey used in our preparations, also available for purchase in our Shop.
We also raise a selection of ornamental poultry, including Livorno Hens, Bantam Sulmtalers (a Slow Food presidium), and Araucanas, famous for their green eggs. In a separate barn, we raise white pigs from which we obtain the meats and the local Salame served during events. The local Salame is part of the product selection available in the Shop.
